Baked Avocado + Egg Breakfast

This is something I enjoy eating quite a bit. Despite what certain people may want you to believe, avocados and avocado based meals are not going to set you back too much, especially if you make them at home. This is a really simple and easy to prepare meal and its a relatively healthy option.



  • 1 avocado, cut in half with the pit removed

  • 1 egg

  • sweet chili sauce

  • small amount of diced red onion

  • small amount of diced mushrooms

  • salt and pepper

The first thing you have to do is preheat the oven to 425 degrees.

Next you'll want to put your avocado halves into a small oven safe tray. Personally I used something I use to make pound cakes. You'll also want to line it with foil or parchment paper or something like that.

Break the egg into a bowl and whisk lightly. Pour mixture into avocado halves into the space left by the pit. Sprinkle with salt and pepper and the red pepper flakes. Place in the oven for 10 minutes.

After ten minutes, I opened the oven and sprinkled on some of the diced mushrooms. You can do this at the beginning but I didn't want them to cook too much. Then I closed the oven and let it all sit at the same heat for 8 more minutes.

At this point I pulled the tray out of the oven and transferred the avocados to a plate. I sprinkled the diced onions on top of them and then drizzled sweet onion sauce over the whole thing.

And that's it.

Super easy and healthy. Plus its something you can customize easily as well with whichever toppings you personally like.
